Instructions

  1. Preheat oven to 350°F. Line an 8-inch round baking pan or similar sized oven-safe skillet with parchment paper.
  2. Whisk together almond flour, coconut flour, garlic powder, and baking powder in a small bowl.
  3. Combine mozzarella and cream cheese in a large microwave-safe bowl. Cover cream cheese with mozzarella. Melt in the microwave at 30-second intervals, stirring after each until cheese is completely melted and uniform, about 1 minute total.
  4. Add cheese, eggs, and flour mixture to a food processor with a dough blade. Pulse on high speed until the dough is uniform and sticky.
  5. Scoop out the dough with a spatula, place onto a large sheet of plastic wrap, and knead a few times inside the wrap until smooth. Oil your hands, divide the dough into 8 parts, and roll each into a ball.
  6. Roll each ball in Parmesan crumbs and place on the prepared baking pan, spaced 1 inch apart.
  7. Bake for 25-30 minutes on the middle rack, or until golden brown.
  8. For the topping, combine garlic, butter, and oil in a saucepan. Simmer for 30 seconds or until butter melts and garlic is fragrant. Stir in parsley. Brush over baked rolls. Serve hot.
