  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 2 cups turnips, peeled and chopped
  • 1 teaspoon dried thyme

  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
  2. In the same pot, add diced onion and cook until translucent. Add minced garlic and cook for another minute.
  3. Return the beef to the pot. Add beef broth, water, and diced tomatoes. Stir well.
  4. Add celery, carrots, and turnips to the pot. Sprinkle in thyme and rosemary. Season with salt and pepper to taste.
  5. Bring the stew to a boil, then reduce the heat and let it simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  6. Serve hot, garnished with fresh herbs if desired.
