  • 1/3 cup peas, fresh or frozen
  • Salt and pepper, to taste
  • 3 tablespoons fresh lime juice
  • Fresh cilantro

Instructions

  1. Begin by ricing the cauliflower using a food processor with a grating disc, a box grater, or a knife. Ensure the cauliflower is finely grated and set aside.
  2. In a pan over medium heat, melt ghee or butter. Add sliced onions, minced garlic, and julienned ginger. Season with salt and sauté for 3-5 minutes until the onions become translucent.
  3. Add cloves, bay leaf, cardamom pods, and whole chilies to the pan. Cook for an additional 1-2 minutes to release their aromatic flavors.
  4. Increase the heat to medium-high. Add the riced cauliflower to the pan and stir well to combine. Season with salt and cook for about 10 minutes, stirring occasionally, until the cauliflower is tender.
  5. Create a well in the center of the pan by pushing the cauliflower mixture to the sides. Add more ghee or butter along with turmeric, coriander, and cumin to the center. Cook for 1 minute before mixing everything together. Add more ghee or butter if the pan is dry.
  6. Continue cooking until the cauliflower reaches your desired tenderness, just starting to brown. Taste to ensure the spices are well-incorporated and adjust salt as needed.
  7. Add peas to the pan and cook for an additional 2-3 minutes until warmed through. Remove from heat and stir in fresh lime juice, chopped cilantro, and chopped chilies.
