  • 4 ounces cheddar cheese
  • 3 ounces cream cheese
  • 4 medium jalapeño peppers, de-seeded and chopped
  • 12 strips bacon
  • 8 large eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste


  1. Preheat your oven to 375°F.
  2. Grate the cheddar cheese and set aside.
  3. Prepare the jalapenos by seeding and chopping them.
  4. Save one jalapeno to slice into rings for garnish.
  5. Par-cook the bacon until it’s semi-crisp but still pliable.
  6. Save the bacon grease in the pan.
  7. Using a hand mixer, combine the eggs, cream cheese, chopped jalapenos, leftover bacon grease, garlic powder, onion powder, salt, and pepper until well blended.
  8. Grease the wells of a muffin tin.
  9. Line the edges of each well with the par-cooked bacon strips.
  10. Pour the egg mixture into each well, filling them only halfway to two-thirds full as they will rise during baking.
  11. Top each cup with grated cheddar cheese.
  12. Add a slice of jalapeno on top of each cup.
  13. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg cups are set and lightly golden on top.
  14. Once baked, remove the egg cups from the oven and allow them to cool slightly.
  15. They will deflate a bit as they cool.
