These Keto Cabbage Rolls are a tasty and low-carb twist on a classic comfort food.


  • 1 medium head of cabbage (approx 2-3 pounds), cored
  • 15 ounces diced tomatoes
  • 1 cup water (for pressure cooker)


  • 1 lb ground meat of your choice
  • 1 small head cauliflower, riced
  • 1/2 cup onion, diced
  • 1 tbsp Italian seasoning or another dried herb
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 garlic cloves, minced


Prepare the cabbage:

  1. Add the cabbage head to a pot of boiling water.
  2. Cook for 3-5 minutes or until cabbage leaves are pliable.
  3. Peel off 12 large leaves.
  4. Let cool.

Stuff the cabbage rolls:

  1. In a large bowl, mix together all the stuffing ingredients.
  2. Place 1/4 cup of the stuffing on a cabbage leaf.
  3. Overlap the ends of the leaf fold in the sides.
  4. Starting from the cut end, roll up.
  5. Repeat until all the stuffing mixture is used.

Slow Cooker Method:

  1. Spoon half of the diced tomatoes into the bottom of the slow cooker.
  2. Add the cabbage rolls, seam-side down.
  3. Pour the rest of the diced tomatoes on top.
  4. Cook on HIGH for 3-4 hours or LOW for 6-8 hours.

Instant Pot Method:

  1. Place a rack in the bottom of the pressure cooker.
  2. Pour in 1 cup of water.
  3. Place half of the cabbage rolls on the rack.
  4. Cover the rolls with about half of the diced tomatoes.
  5. Add the remaining rolls and top with the rest of the sauce.
  6. Close and lock the lid.
  7. Cook on high pressure for 18 minutes.
  8. When done, natural release for 15 minutes, then quickly release any remaining pressure.

Oven Method:

  1. Preheat the oven to 350°F (175°C).
  2. Spray a 9×13 pan with cooking spray.
  3. Add half of the diced tomatoes to the bottom of the pan.
  4. Add the cabbage rolls, seam side down.
  5. Top with the remaining tomatoes.
  6. Cover with foil and bake for 60-90 minutes, or until cabbage is tender and meat is cooked through.


  • If you want a lot of sauce, use 28 ounces of diced tomatoes.
  • Mix your favorite seasonings into the diced tomatoes to add more flavor.

This recipe makes approximately 12 cabbage rolls.
