Ingredients

For the Dough:

  • 1 cooked medium beet
  • 1 tablespoon oil
  • 5-6 tablespoons water
  • 1 teaspoon salt
  • 1 cup flour
  • ¾ cup semolina flour

For the Sauce:

  • 3 tablespoons vegan butter
  • 2 cloves garlic, minced
  • ½ cup crushed hazelnuts
  • ½ lemon, zest and juice
  • Fresh thyme
  • Red chili flakes

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rice the cauliflower by placing florets in a food processor and pulsing until it resembles rice. Alternatively, you can use pre-riced cauliflower.
  3. Microwave the riced cauliflower in a microwave-safe bowl for about 5 minutes, or until soft. Let it cool slightly.
  4. Transfer the cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a large bowl, combine the cauliflower, shredded mozzarella, Parmesan, egg, Italian seasoning, garlic powder, salt, and pepper. Mix well.
