These meatballs are light, tangy, and full of flavor. The lemon and capers give them a refreshing taste, while the chicken keeps them light and healthy. Serve them with a side of roasted vegetables or a fresh salad for a complete low-carb meal.
Ingredients
- 1 lb ground chicken
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tbsp capers, drained
- 2 tbsp butter
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground chicken, Parmesan cheese, almond flour, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Shape the mixture into small meatballs about 1 inch in diameter.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the meatballs are cooked through.
- While the meatballs are baking, prepare the piccata sauce. In a small saucepan, bring the chicken broth and lemon juice to a simmer over medium heat.
- Stir in the capers and butter, allowing the butter to melt completely.
- Remove the meatballs from the oven and pour the piccata sauce over them.
- Garnish with fresh parsley and serve hot.
