  • 2 boneless, skinless chicken breasts
  • 200g halloumi cheese, sliced
  • 4 cups mixed salad greens (lettuce, arugula, spinach)
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 2 tablespoons olive oil (for grilling)
  • Salt and pepper to taste
  • 1 lemon (for dressing)
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 teaspoon dried oregano

  1. Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Let it rest before slicing it into strips.
  2. In the same grill pan, add another tablespoon of olive oil. Grill the halloumi slices for 2-3 minutes on each side until golden and crispy. Remove from the pan and set aside.
  3. In a large bowl, combine the mixed salad greens, cucumber, bell pepper, and avocado.
  4. Top the salad with the sliced chicken and grilled halloumi.
  5. In a small bowl, whisk together the juice of one lemon, extra virgin olive oil, dried oregano, and a pinch of salt and pepper.
  6. Drizzle the dressing over the salad and toss gently to combine.
  7. Divide the salad among plates and enjoy immediately.
