  • 6-8 bell peppers (4 if using 1/2 lb ground beef; 1/2 lb Italian sausage)
  • 1 lb ground beef
  • 1 lb mild Italian sausage
  • 1/2 diced white onion
  • Onion & garlic powder
  • Oregano
  • Salt & pepper
  • 1 jar Simply Nature organic tomato and basil pasta sauce
  • 1 bag Earthly Grains microwaveable cauliflower rice
  • Reggano parmesan cheese
  • Happy Farms colby jack cheese (shredded)


  1. Preheat your oven to 350°F.
  2. Prepare the bell peppers by cutting off the tops and halving them. Remove the seeds and insides, then place them in a baking dish.
  3. Dice the excess pepper from the tops and set aside.
  4. In a skillet, combine ground beef, Italian sausage, diced white onion, diced peppers, and seasonings (onion & garlic powder, oregano, salt & pepper). Cook until the meat is browned.
  5. Pour 3/4 of the jar of pasta sauce into the skillet. Simmer on low heat until the flavors meld together.
  6. While the meat sauce simmers, microwave the cauliflower rice for 90 seconds.
  7. Add the cauliflower rice to the skillet, stirring until well combined.
  8. Spoon the filling into the prepared bell peppers. Top with the remaining pasta sauce, followed by a generous sprinkle of parmesan and shredded colby jack cheese.
  9. Finish off with a dash of oregano for that extra burst of flavor.
  10. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese turns golden brown and the peppers are tender.
