Ingredients

  • 2 large zucchinis
  • 1 lb ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • 4 slices cheddar cheese, cut into quarters
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon ketchup (sugar-free)
  • 1/4 cup pickles, sliced
  • 1 small red onion, thinly sliced
  • 1 large tomato, thinly sliced
  • Fresh lettuce leaves

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis into 1/2-inch thick rounds. You should get about 16 rounds.
  3. Arrange the zucchini rounds on a baking sheet and brush both sides with olive oil. Bake in the preheated oven for 10-12 minutes, flipping halfway through, until tender.
  4. While the zucchini is baking, heat a skillet over medium-high heat. Add the ground beef and season with salt, pepper, garlic powder, and onion powder. Cook until browned and cooked through, about 5-7 minutes.
  5. Once the beef is cooked, form small patties that fit the size of the zucchini rounds.
  6. Place a slice of cheese on each beef patty and allow it to melt.
  7. In a small bowl, mix together the mayonnaise, mustard, and ketchup to create the sauce.
  8. Assemble the sliders by placing a beef patty on a zucchini round, adding a pickle slice, a bit of red onion, a slice of tomato, and a piece of lettuce. Top with another zucchini round.
  9. Secure each slider with a toothpick if needed.
  10. Serve immediately with the prepared sauce on the side for dipping.
