Ingredients

  • For the Pork Filling:
    • 1.3 pounds ground pork
    • 1 teaspoon sesame oil
    • 1 1/2 teaspoons cornstarch
    • 2 cloves garlic, minced
    • 1 teaspoon soy sauce
    • 1 teaspoon Shaoxing wine
    • 1 teaspoon fresh ginger, minced
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon sugar substitute
    • Mung bean sprouts, to taste
  • For the Sauce:
    • 1 cup chicken stock or low-sodium broth
    • 1 teaspoon Shaoxing wine
    • 1 teaspoon soy sauce
    • 1 teaspoon oyster sauce
    • 1 clove garlic, crushed
    • 1/2 teaspoon sugar substitute
    • 4 scallions, julienned
  • Additional:
    • One green cabbage

Instructions:

  1. Mix together all filling ingredients except the bean sprouts. Form into 8 balls and chill in the fridge for 30 minutes.
  2. Bring a large pot of water to a boil.
  3. Combine all sauce ingredients in a separate bowl and set aside.
  4. Cut the bottom off the cabbage and carefully peel off about 16 leaves. If they tear, use extra leaves to cover any holes.
  5. Boil the leaves for a few minutes until softened. Remove and set on a cutting board.
  6. Layer leaves to cover holes, place a portion of the pork mixture and a small bunch of bean sprouts on each leaf, and wrap tightly.
  7. Place rolls in a steamer basket, top with scallions, and set in an Instant Pot.
  8. Pour the prepared sauce over the rolls and seal the pot.
  9. Steam on high pressure for 20 minutes until the cabbage is tender.
  10. Serve with some steaming liquid poured over as sauce.
