A protein-packed morning delight

  • 8 oz steak (ribeye, filet, striploin, etc.)
  • Salt and pepper, to season
  • 3 tablespoons avocado oil or another high heat oil for frying
  • 2 sprigs fresh rosemary
  • 4 tablespoons butter, divided
  • 1 medium onion, sliced thick
  • 8 large shiitake mushrooms, stems removed and sliced
  • 1 teaspoon Worcestershire sauce
  • 6 large eggs
  • 2 tablespoons sour cream
  • ⅓ cup Swiss cheese, shredded or cubed

  1. Season the steak liberally with salt and pepper.
  2. Heat oil in a skillet over medium-high to high heat until almost smoking.
  3. Sear the steak for 2 minutes per inch of thickness on each side for medium rare, using a meat thermometer to ensure accuracy.
  4. In the last minute of cooking on the second side, add 2 tablespoons of butter and a sprig of rosemary to the pan. Spoon the melted butter over the steak repeatedly.
  5. Remove the steak from the skillet and let it rest on a wire rack or cutting board.
  1. Reduce the heat to medium and add the sliced onions to the same pan.
  2. Season with salt and pepper and sauté until the onions are softened and beginning to brown.
  3. Add a dash of Worcestershire sauce and continue cooking until the onions are golden brown.
  1. Add the sliced shiitake mushrooms (and additional butter if needed) to the pan.
  2. Sauté the mushrooms until golden brown on both sides.
  3. Remove the onions and mushrooms from the pan and set aside.
  1. Beat the eggs with sour cream until light and fluffy.
  2. Pour the eggs into the pan and cook, stirring with a spatula, until nearly set. The eggs should remain soft and fluffy.
  3. Add the shredded Swiss cheese, sautéed onions, and mushrooms, stirring to combine. Remove from heat just before the eggs are fully set.
  1. Slice the rested steak into thin pieces.
  2. Place slices of steak on top of the scrambled eggs.
  3. Garnish with fresh parsley and season with additional salt and pepper to taste.
  4. Serve immediately as part of a satisfying low carb, high protein breakfast.
