  • 3 tablespoons avocado oil or another high heat oil for frying
  • 2 sprigs fresh rosemary
  • 4 tablespoons butter, divided
  • 1 medium onion, sliced thick
  • 8 large shiitake mushrooms, stems removed and sliced
  • 1 teaspoon Worcestershire sauce
  • 6 large eggs
  • 2 tablespoons sour cream
  • ⅓ cup Swiss cheese, shredded or cubed

Instructions

  1. Season the steak liberally with salt and pepper.
  2. Heat oil in a skillet over medium-high to high heat until almost smoking.
  3. Sear the steak for 2 minutes per inch of thickness on each side for medium rare, using a meat thermometer to ensure accuracy.
  4. In the last minute of cooking on the second side, add 2 tablespoons of butter and a sprig of rosemary to the pan. Spoon the melted butter over the steak repeatedly.
  5. Remove the steak from the skillet and let it rest on a wire rack or cutting board.
