Filling:

  • 24 oz cream cheese
  • 2 cups yogurt (plain Greek yogurt)
  • 2 1/2 tsp pure vanilla extract
  • 1 Tbsp lemon juice (optional)
  • 2/3 cup erythritol
  • 1/4 cup almond flour
  • 1/8 tsp xanthan gum (optional)

Topping:

  • For caramel: (yields 2 cups, scale down if desired)
    • 1 1/4 cup heavy whipping cream
    • 1/2 cup butter (salted)
    • 1 cup Allulose
    • 1 tsp vanilla
  • Additional toppings:
    • 3/4 cup crushed pecans
    • 3 Tbsp melted Lily’s semisweet chocolate chips (for drizzle)

Instructions

  1. Preheat the oven to 350°F. Combine almond flour, salt, erythritol sweetener, and melted butter. Press the mixture into a lined and oiled 8 or 9-inch springform pan. Pre-baking the crust is optional.
  2. In a blender or food processor, beat cream cheese, yogurt, vanilla extract, lemon juice, erythritol, almond flour, and xanthan gum until smooth. Avoid overbeating.
  3. Fill a baking pan halfway with water and place it on the oven’s lower rack. Spread the filling over the prepared crust. Bake for 30 minutes (or 38 minutes for an 8-inch pan) without opening the oven. After baking, turn off the heat and let the cheesecake sit in the oven for an additional 5 minutes without opening the door.
  4. Remove the cheesecake from the oven and let it cool on the counter for 20 minutes. Refrigerate overnight to allow the cheesecake to firm up.
