  • 2 lbs beef stew meat
  • 4 slices of bacon, chopped into pieces
  • 3 carrots, sliced
  • 3 stalks of celery, sliced
  • 1 cup fresh parsley
  • Fresh or dried thyme
  • 1/2 lb cremini mushrooms, chopped
  • 2 medium shallots, chopped
  • 1 cup red wine
  • 1.5 cups beef broth
  • Butter (as needed)


  1. Put a large pot (a big Dutch oven works great) on medium-high heat.
  2. Sauté the bacon pieces in 2 tablespoons of butter. Once cooked but not crispy, remove the bacon to a plate with a spatula or slotted spoon.
  3. Add 2 more tablespoons of butter to the pot and sauté the shallots and mushrooms until the shallots are translucent and the mushrooms have shrunk and darkened. Remove to a plate.
  4. Add another 2 tablespoons of butter and sauté the celery and carrots. Remove to a plate.
  5. Add more butter if needed, and brown the meat, turning the pieces slowly to sear evenly. (Note: Sauté the ingredients in half batches to avoid crowding the pan, using 2 tablespoons of butter for each half batch to prevent dryness.)
  6. Once everything has been sautéed and browned, add everything back to the pot except for the carrots and celery.
  7. Add the wine, wait for it to start bubbling, then turn the heat down to medium or medium-low.
  8. Add the beef broth and thyme (about 1 teaspoon of fresh thyme or to taste). Let simmer until the meat is tender (approximately 10 minutes, depending on the quality of the stew meat).
  9. Add the celery and carrots back in for the last couple of minutes.
  10. Garnish with fresh parsley and serve hot.
