Ingredients

For Catfish:

  • 2 10oz Catfish Fillets
  • 1 tbsp paprika
  • 2 tbsp Cajun seasoning (Louisiana fish fry products)
  • 1 tbsp onion powder
  • 1 tbsp Garlic Powder
  • 1 peeled garlic clove
  • 1/4 tsp pink salt
  • 1 room temperature stick butter
  • 1/2 lemon

Asparagus:

  • 1 tbsp coconut oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 clove chopped garlic
  • 1 tsp black pepper
  • Asparagus spears
  • Feta cheese

Instructions

Catfish:

  1. Place Catfish Fillets in a plastic bowl and coat them in butter.
  2. Add garlic powder, onion powder, Cajun seasoning, pink salt, and paprika to the bowl and massage the seasonings into the fish.
  3. Remove the fillets and lay them on a tray.
  4. Simmer a cast iron skillet on medium-low heat.
  5. Add half a stick of butter to the skillet along with a peeled garlic clove and a pinch of pink salt. Simmer for 2 minutes until the butter starts to brown.
  6. Add both Catfish Fillets to the skillet and cook on medium-low heat for 5 minutes.
  7. Flip the fillets and continue cooking until the internal temperature reaches 140°F, about 12 minutes total.
  8. Turn the heat to medium-high and cook on each side until dark brown.
  9. Remove the fillets and place them on a cooling tray for 5 minutes.
  10. Add the lemon to the skillet and allow it to brown. Squeeze the lemon juice on top of the fish and serve.

For Asparagus:

  1. Simmer coconut oil, garlic powder, onion powder, chopped garlic, and black pepper in a pan on low heat.
  2. Add the asparagus spears to the pan and mix well.
  3. Raise the heat to medium and cook for 5-10 minutes, depending on desired tenderness.
  4. Remove from heat and top with crumbled feta cheese.
