  • 2 pounds KC or NY Strip Steak, porterhouse (2 large pieces or 4 smaller pieces)
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons butter
  • 1/4 cup shallots, finely diced, or onion
  • 2 cloves garlic, minced
  • 16 oz sliced baby Bella mushrooms (crimini or brown)
  • 1 teaspoon all-purpose seasoning blend
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Season the steaks with salt, pepper, and your favorite all-purpose seasoning blend.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the steaks to the skillet and cook for 4-5 minutes on each side, or until they reach your desired level of doneness. Remove the steaks from the skillet and set aside.
  4. In the same skillet, add the butter and let it melt.
  5. Add the shallots (or onion) and garlic to the skillet, and sauté for about 2 minutes until fragrant.
  6. Add the sliced mushrooms to the skillet and cook for 5-6 minutes until they are tender and browned.
  7. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  8. Stir in the heavy cream and continue to simmer for another 3-4 minutes until the sauce thickens slightly.
  9. Return the steaks to the skillet, spooning the mushroom sauce over the top.
  10. Allow the steaks to simmer in the sauce for an additional 2-3 minutes to heat through.
  11. Serve the steaks hot, topped with the creamy mushroom sauce.
