Ingredients

  • 1 tbsp grass-fed unsalted butter
  • 30g Crimini mushrooms
  • 10g chopped onion
  • 15g arugula
  • 1/8 cup shredded mozzarella
  • 40g avocado
  • 2-3 large eggs
  • No sugar bacon
  • Spanish deli meats multipack from Trader Joe’s
  • Hot sauce, salt, pepper to your preference

Instructions

  1. In a skillet, melt 1 tablespoon of grass-fed unsalted butter over medium heat.
  2. Add 30g of sliced Crimini mushrooms and 10g of chopped onion to the skillet. Sauté until the mushrooms are tender and the onions are translucent.
  3. Once cooked, add 15g of arugula to the skillet and sauté for an additional few minutes until wilted.
  4. Crack 2-3 large eggs into the skillet and lightly scramble them with the mushroom, onion, and arugula mixture.
  5. When the eggs are mostly cooked, sprinkle 1/8 cup of shredded mozzarella over the top and continue cooking until the cheese is melted and the eggs are thoroughly cooked.
  6. While the eggs are cooking, prepare a side of no sugar bacon according to your preference.
  7. Once the scramble is cooked to perfection, top it with 40g of sliced avocado and a couple of slices of Spanish deli meats from the multipack.
  8. Season with hot sauce, salt, and pepper to taste.
  9. Serve hot and enjoy your satisfying keto breakfast!
