Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet over medium heat, cook the Italian sausage until browned and cooked through. Drain excess fat.
  4. Stir in the marinara sauce and cooked cauliflower rice. Cook for another 2-3 minutes, allowing flavors to combine.
  5. Remove the skillet from heat and stir in the ricotta cheese until well combined.
  6. Spoon the sausage mixture evenly into each bell pepper.
  7. Place stuffed peppers upright in a baking dish.
  8. Top each pepper with shredded mozzarella cheese.

  10. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  11. Remove from oven and let cool slightly before serving.
