Ingredients

  • 1 pound boneless/skinless chicken thighs
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1 1/2 teaspoons paprika
  • 3 tablespoons olive oil, divided

For the Sauce:

  • 2 tablespoons minced garlic
  • 1/2 tablespoon Italian seasoning
  • 3 oz jarred sun-dried tomato strips in oil (reserve 1 tablespoon of the oil for cooking)
  • 3/4 cup heavy or thickened cream
  • 1/4 cup chicken broth (more depending on thickness of sauce)
  • 3 cups spinach, chopped
  • 1/2 cup fresh grated Parmesan cheese
  • 2 tablespoons fresh chopped parsley to serve

Instructions

  1. Season the chicken thighs with salt, black pepper, and paprika.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  3. Cook the chicken thighs until golden and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, add the remaining 1 tablespoon of olive oil and the reserved oil from the sun-dried tomatoes.
  5. Sauté the minced garlic until fragrant, about 1 minute.
  6. Add the Italian seasoning and sun-dried tomato strips, and cook for another minute.
  7. Pour in the heavy cream and chicken broth, stirring to combine.
  8. Bring the sauce to a simmer, then add the chopped spinach and cook until wilted.
  9. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  10. Return the chicken thighs to the skillet, spooning the sauce over them.
  11. Simmer for another 2-3 minutes until the chicken is heated through and coated in the sauce.
  12. Serve the creamy Tuscan chicken over zoodles, garnished with fresh chopped parsley.
