    • 1 tablespoon fresh lime juice
    • 2 jalapeños
    • Salt, to taste
  • For the Low Carb Tortillas:
    • 1/2 cup almond flour
    • 1/3 cup lupin flour
    • 1 tablespoon xanthan gum
    • 1/2 teaspoon salt
    • 6 tablespoons water

Instructions

  1. Guacamole: In a bowl, combine avocados, red onion, cilantro, jalapeños, lime juice, salt, pepper, and garlic. Mash to desired consistency. Chill until ready to serve.
  2. Salsa Verde: Place tomatillos, garlic, and jalapeños on a baking sheet. Broil for 5-7 minutes until charred. Transfer to a blender, add onion, cilantro, lime juice, and salt. Blend until smooth. Chill for at least 2 hours to enhance flavors.
  3. Tortillas: In a mixing bowl, combine almond flour, lupin flour, xanthan gum, and salt. Gradually add water and knead until a dough forms. Divide into balls (eight for mini tortillas or four for 6” tortillas). Flatten each ball using a tortilla press or a rolling pin between two sheets of parchment paper.
  4. Assembly: Heat tortillas briefly on a skillet. Spread guacamole on each tortilla, top with your choice of cooked carne asada (not included in the original recipe), and drizzle with salsa verde.
