Easy, Quick Rosemary Lemon Boneless Chicken Thighs

These Rosemary Lemon Boneless Chicken Thighs are full of flavor and so simple to make for even the busiest of days for a fabulous weeknight dinner!

Admittedly, my family gets tired of having one of my chicken recipes for dinner so often, but these combinations of herbs and flavors never disappoints. You’ll love this because is only takes about 30 minutes to make.

Ingredients You’ll Need

  • Lemon zest – Don’t skip this as I have done in the past. If you’re using a tool as handy as this zester, it doesn’t take long.
  • Garlic – minced. Save some time and grab a jar of the freshly minced garlic.
  • Rosemary – Dried is just fine, and so much easier to have on hand.
  • Boneless, skinless chicken thighs – We get the packages of chicken thighs from Costco and use 1 of the packs for this recipe. It typically has 4-5 thighs in each.
  • Extra Virgin Olive Oil – This will be used when searing the chicken initially.
  • Salt and Pepper – Use accordingly to your personal taste preference.

How to Make The Chicken Recipe

Step one: Combine lemon zest and 1/2 lemon juice with garlic and rosemary. Combine well.

Step two: Season chicken thighs with salt and pepper.

Step three: Place chicken thighs in an air tight container. Pour marinade on top. Close and shake to thoroughly combine. Allow to marinate for at least 30 min, or overnight.

Step four: Heat olive oil in large skillet over medium-high heat. Can be a dutch oven or a cast iron skillet if available.

Step five: Place marinated chicken info hot skillet to sear for about 3-4 min each side. Remove chicken from skillet and set aside.

Step six: Add remaining lemon juice and 1/4 cup of water to hot skillet to deglaze. Gently scrape surface of pan to remove any browned bits. Bring to a boil and reduce heat to medium-low.

Step seven: Place chicken back into skillet to simmer 3-4 minutes or until chicken is cooked through. Remove from heat and serve immediately.
