  • 1 1/2 cups (337g) crushed tomatoes
  • 1/2 cup (120ml) heavy cream
  • 2 tsp dried oregano
  • 1/2 tsp sea salt, or to taste

For the stuffing:

  • 1/2 small cauliflower head, should yield about 1 3/4 cups (210g) of cauliflower rice
  • 1.5 lb (680g) ground pork (or a mix of pork and turkey/beef)
  • 1 cup (113g) cheddar cheese, shredded
  • 1 large egg
  • 1 1/2 tsp sea salt, or to taste
  • 1/2 tsp ground black pepper
  • 1/2 cup (120ml) sauce


  1. Preheat your oven to 350°F (180°C).
  2. Begin by preparing the cabbage. In a large pot, bring water, vinegar, and salt to a boil. Submerge the cabbage, cook for 5 minutes, flip, and continue for another 5-6 minutes until the leaves soften. Remove, drain, and let cool.
  3. For the sauce, heat olive oil in a skillet, add onions and carrots, and sauté until soft. Stir in tomatoes, cream, oregano, and salt, and simmer until bubbly. Set aside.
  4. Create cauliflower rice by pulsing florets in a food processor or grating them. Set aside.
  5. For the stuffing, mix ground meat, cauliflower rice, egg, salt, pepper, cheese, and half a cup of sauce in a bowl.
  6. Flatten the cabbage leaves and place 2 tbsp of stuffing on each. Roll up and tuck in the ends.
  7. Arrange the rolls in a Dutch oven, pour the remaining sauce and about 1 cup of reserved water over them.
  8. Cover and bake for 1 hour 15 minutes to 1 hour 30 minutes, checking halfway to add more water if needed.
