Keto Cheese-Stuffed Kachapuri

A keto-friendly version of the classic Georgian cheese-filled bread, perfect for brunch or a comforting dinner.

Ingredients:

Fathead crust:

  • 1 1/2 cups almond flour, lightly packed
  • 1 tablespoon baking powder
  • 2 1/2 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 2 large eggs
  • 1 teaspoon stevia (optional for sweetness)

Filling:

  • 1 1/2 cups farmers cheese or more mozzarella
  • 1 1/2 cups shredded mozzarella cheese
  • 1 1/2 cups feta cheese
  • 5 eggs (4 for the filling, 1 for egg wash)
  • Butter for brushing

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. For the Fathead crust, combine almond flour and baking powder in a microwave-safe bowl. Add shredded mozzarella cheese and cream cheese. Microwave on high for 1 minute, stir, then microwave for an additional 30 seconds until cheese is melted. Mix in eggs and stevia until a dough forms.
  3. Divide the dough into two equal portions. Roll each portion into a rectangle on the parchment-lined baking sheet.
  4. In a mixing bowl, combine farmers cheese (or additional mozzarella), shredded mozzarella cheese, feta cheese, and 4 eggs for the filling. Mix well.
  5. Spread half of the cheese filling down the center of each dough rectangle, leaving space on the edges. Fold the edges of the dough over the filling, pinching the ends to seal and create a boat-like shape.
  6. Beat the remaining egg and brush it over the crust of each Kachapuri boat for a golden finish.
  7. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the filling is heated through.
  8. Remove from the oven and let cool slightly before slicing. Serve warm and enjoy!
