Full of flavor and color for your dinner, lunch, meal prep or bowl, this sheet pan dinner is the recipe to have close at hand when you want chicken and veggies. Fewer dishes and prep time means more time doing the other items on your to-do list.
In a medium sized bowl combine sweet potato, 1Tbs olive oil, 1 tsp salt and toss until coated. Place on a baking sheet and roast for 10 minutes.
In the same bowl, combine the remaining vegetables, chicken, 2 Tbs olive oil, 2 tsp salt, lemon juice, Italian seasoning, and garlic powder. Toss to combine and set aside.
Take sweet potatoes out of oven and transfer all remaining vegetables and chicken to baking sheet with sweet potatoes and stir ingredients.
Bake for 15-20 additional minutes, stirring halfway through.
Remove from oven when all vegetables are fork tender. Enjoy!
