Sheet Pan Chicken Dinner with Sweet Potatoes and Peppers

Full of flavor and color for your dinner, lunch, meal prep or bowl, this sheet pan dinner is the recipe to have close at hand when you want chicken and veggies. Fewer dishes and prep time means more time doing the other items on your to-do list.

Ingredients
  

  • 3 cups sweet potatoes peeled and cut into 1 in cubes
  • 2 cups broccoli roughly chopped
  • 1 cup red onion chopped
  • 1 red bell pepper chopped
  • 1-1½ lbs chicken breast chopped into 1 in pieces
  • 3 tbsp olive oil divided
  • 2 tsp lemon juice
  • 1 tbsp Italian seasoning
  • 1 tsp Garlic powder
  • salt & pepper to taste

Instructions
 

  • Preheat oven to 400 degrees
  • In a medium sized bowl combine sweet potato, 1Tbs olive oil, 1 tsp salt and toss until coated. Place on a baking sheet and roast for 10 minutes.
  • In the same bowl, combine the remaining vegetables, chicken, 2 Tbs olive oil, 2 tsp salt, lemon juice, Italian seasoning, and garlic powder. Toss to combine and set aside.
  • Take sweet potatoes out of oven and transfer all remaining vegetables and chicken to baking sheet with sweet potatoes and stir ingredients.
  • Bake for 15-20 additional minutes, stirring halfway through.
  • Remove from oven when all vegetables are fork tender. Enjoy!

Notes

The best part of this dish is that it uses 1 bowl and one pan to prepare this meal! It requires minimal cleanup for a full meal. Plus it’s healthy and low carb!
For Keto, use boneless chicken thigh instead of chicken breast.
