Easy Parmesan Breakfast Potatoes with Onions  (30 Min)

These Easy Parmesan Breakfast Potatoes make a great addition to your morning breakfast.

One of the things you’ll love most about this amazing recipe is leftovers are awesome warmed up and served as part of a lunch or dinner meal as a savory side dish.


– Potatoes – Extra Virgin Olive Oil – Red bell pepper – Red onion – Garlic powder – Parsley – Rosemary  – Paprika – Parmesan cheese – Salt and pepper


Place potatoes and water into a large microwave-safe bowl and cover. Microwave on high for 3-4 minutes, or just until potatoes are crisp tender, but not mushy.

Meanwhile, heat olive oil in a large cast-iron skillet over medium heat.

Add red pepper and onion and sprinkle with garlic powder, parsley, rosemary, and smoked paprika.

Cook, stirring frequently, until the pepper and onion soften and develop a bit of color, approximately 3-4 minutes.

Drain potatoes from excess moisture and pat dry with paper towels. Transfer to the skillet and season with additional salt and black pepper, as desired.
