– Potatoes – Extra Virgin Olive Oil – Red bell pepper – Red onion – Garlic powder – Parsley – Rosemary – Smoked paprika – Parmesan cheese
Place potatoes and water into a large microwave-safe bowl and cover.
Meanwhile, heat olive oil in a large cast-iron skillet over medium heat. Add red pepper and onion and sprinkle with garlic powder, parsley, rosemary, and smoked paprika.
Cook, stirring frequently, until the pepper and onion soften and develop a bit of color, approximately 3-4 minutes.
Drain potatoes from excess moisture and pat dry with paper towels. Transfer to the skillet and season with additional salt and black pepper, as desired.
